the only big problem I can see is that your logo is a bit too big and is pushing your menu down. I would suggest reducing the size of you logo to about 280px width and 100px height.
We will be adding an update before the end of the week that allows you to hide the header in all pages other than the homepage.
even when the logo was smaller, the header picture never showed full size. what are the benefits to the upgrade? i chose this theme based on the demo, but the live version and the demo are different.

your header is showing full size for me. Can you provide a screenshot of what you are seeing? I can 100% guarantee that the theme you have downloaded is the same one used in the demo. Please make sure you are using the correct image sizes: http://templateexpress.com/brasserie/documentation/#images

the demo is using the flexslider option. This can be turned on by going to admin > appearance > customize > homepage settings > homepage slider > and then select flexslider from the dropdown.
