I understand that Product Filter by Attribute widget is not functioning on your site right now.
It is a known bug:

In version 4.5.0, the “Filter products by attribute” widget is not yet fixed which means that variable products will not be displayed by the widget.
It also looks like in version 4.5.1, the old functionality will be reverted:

Which means that all variations, even out of stock ones, will be displayed by the widget in version 4.5.1.
It might be possible to use an additional plugin to hide out of stock variations with 4.5.1 if this is what you need.
Our developers attempted to hide out of stock variations when “Filter Products by Attribute” widget is used but this broke too many things. Therefore, they decided to take a step back and restore the old functionality in 4.5.1.
They will likely try hiding out of stock variations from Filter Products by Attributes widget again in the future although it’s hard to say how long that will take.

In my case, Woocommerce is tried to update to v. 4.5 not 4.5.1. I returned it to 4.3.1 (old backup, but the others plugins updated). Now is OK, and I will wait new release! I do not use variations!!! I cleared every products and start with very simple test – problem with v. 4.5.

In my case, Woocommerce is tried to update to v. 4.5 not 4.5.1.
WooCommerce 4.5.1 was released about an hour after your last message so at that time, only 4.5 (with broken Filter Products by Attribute widget) was available.
I returned it to 4.3.1 (old backup, but the others plugins updated). Now is OK, and I will wait new release! I do not use variations!!! I cleared every products and start with very simple test – problem with v. 4.5.
It should be safe to update to 4.5.1 now but let us know if you will keep seeing other filters disappearing after one is selected.
