Where is the archive?!

Please explain it to me like I’m five…

I am maintaining a business site and my boss wants me to archive the site so that earlier versions of the website can be brought back live. We aren’t just talking the blog here. I don’t know what to do! Is it a plug in that I need, is it in my theme options? I am so confused, please help me!
