Variation Stock Tracking

Hi,
I’ve been busy working on figuring out a way to track the total stock from all variation items attached to a parent. What I did is make a custom field and loop through all the children, counting the stock and then throwing it into the field, which works brilliantly. However, the stock gets updated in a lot of different places with what seems to be different methods.
What should I hook into to let my code run everytime stock is changed?
