Variable Product Help Needed

Hi,

I am helping a charity out with their website. They are doing a virtual night at the races horse racing fundraiser and want to sell horses via their website.

There are eight races, and each race has 8 different horses. I need to know how i can have a product that is as follows:

When you Click for example Race A -> a drop-down menu of eight different horses will be displayed and so on for each race.

Does anyone have a guide or be able to tell me how this is possible?
