trouble with inserting a page

I want to add a page within a page…
(i.e. create a page called CARS, then inside that page have a link to another page called FORD)

Everytime a create a page inside a parent page it still adds that page to the header menu. Is there a way to stop this or can I create a page outside of the wordpress system and manual upload it and link then? (if so, what coding would be needed to insert the header/footer)
