These should be translated into French though, that is the one translation that is nearly 100% complete. These are setup during the installation though so if you did not have French set as your language when Sunshine was installed, then that would be the issue. PLEASE NOTE: Do not delete these order statuses. Doing so will have severe negative consequences to your installation of Sunshine. This is why this area is “hidden” (I simply remove the link in the admin) because lots of people when given access to this were breaking their installation of Sunshine.
As for order numbers, those are the unique ID of the post that gets created and cannot be reset.
