Video Thumbnails does not generate the thumbnail image itself, so YouTube must be creating blurry thumbnails. Do you have any specific examples I could take a look at? You can also try visiting the debugging tab on the settings page and paste the link into “Test Markup for Video” and then you can open the link directly to the image on YouTube and take a look.
Ok, my apologies. I’d read on YouTube that if your video is in High Def that the thumbnail will also be in HD, so I assumed my thumbnail was HD, yet this is what my video image that was pulled by the plugin looked like:

I had to upload a separate screenshot of my video as a featured image for it to look nice:

But then tonight I checked another video that I just posted, that was also done in HD, and their thumbnail comes out great with Video Thumbnails:

So I think you are correct and it must be something going on between my videos and YouTube. I will contact them and sort it, try to come back and post up what I find in case anyone else runs into the issue.
