I think you’re running an old version of Jobify which is why it looks that way. See http://jobify.astoundify.com/article/353-upgrading-to-version-2-0-0
You can customise the single job page, but you’ll need to refer to jobify docs + support because they have their own custom versions of the template files.

What URL do you have set for the image on the job, is it a valid url / image?
Choosing it from my media library so shouldn’t cause any problems?
Recently updated Jobify theme to 2.0. Will that have possibly caused it?

Since Jobify has it’s own custom template files I would first rule out any conflict / compatibility issues there. I’m not able to replicate the issue on a clean install and would first rule this out.
You could:
(A) Temporarily disable the template overrides Jobify makes.
(B) Test w/ default theme bundled with WP.
