SIDEBARS for Specific Product Category

Hi
I see the page shortcode for product category specific that can be used with individual sidebar menus.
Works good but problem I’m facing is I’m looking to set up side bar on product category page that shows sub categories – that in themselves include all the products in that category.
Not sidebar on page that shows all the products in the overall category.

Specifically I have this page

Which is shop page and sidebar is set in theme options/shop settings
If we click on say “Stock”

That is where I want a specific sidebar for that product category page that shows the sub categories
Not simply on a stock category page which the shortcode

produces

Id rather the sidebar specific to category ‘stock’ be (1) on this page

(2)rather than the side bar that is set in shop settings from theme options

Next would be another custom sidebar for this page

accessed from the shop page
https://www.saltspringnursery.com/shop/

Again need a short code that assigns product category specific but that also includes the subcategories

So Shop page ok with sidebar set in shop settings however pages landed on from shop page, specifically the seed page and the stock page, I would like two different sidebars for each page but the sidebars is not where I’m having difficulty.
Difficulty is finding the right short code to display the seed and stock pages with their product category/subcategories as explained above/
Doable?
