There isn’t a shortcode in WooCommerce to display customer email. The list of available shortcodes included with WooCommerce can be found here:

Customer emails appear in the order details and in the new order email sent to the administrator and/or chosen recipient(s) when a new order is received. Where exactly are you trying to display customer emails?
