Short code first value

I have a ‘select field’ which contains key-value pair:
[select type-food “Fast Food | fast@email.com” “Gourmet | gourmet@email.com”]

On the email I need to show both, the type of food and (somewhere esle) the email associated. Here is an example:

“You have selected ‘Fast Food’ and it will be sent to email ‘fast@email.com'”

How do I specify which data to show?
