Hi Joe,
You can go to Ultimate Member > Member Directories. In that admin area you can easily build member directories, select Add new directory for example.
If you browse the options, you will see Enable search option, click “yes” and here you can specify the custom fields that will appear in search.
Here is an example from our demo

No shortcodes are needed, just setting up the options in Member Directory page builder.
