If i just remove the plugin will it reset all the changes it made?
Yes, deactivating and then deleting the iTSec plugin will remove all traces and undo any changes made with it … but there is no need to delete the plugin.
Define the ITSEC_DEVELOPER constant in the wp-config.php file and then only deactivate\activate the iTSec plugin.
Don’t forget to remove the ITSEC_DEVELOPER constant from the wp-config.php file once you are done (important!).
If you feel more comfortable deactivating and deleting the iTSec plugin and then reinstalling it go right ahead.
All of the above assumes you want a fresh new start using the iTSec plugin.
