This was not theme related – I sorted it out.
For the ones seeking for a solution, it’s pretty simple.
Just go to Appearance > Customize > Site Identity > Site Icon
Define a 512 * 512 PNG there and voila, you oEmbed uses this icon, instead of a default WordPress icon.
Just go to Appearance > Customize > Site Identity > Site Icon
that exactly is theme specific…
