We have options for these already. You can the post meta data and the tags from the options panel. Go to AMP > Single > and turn off the “Post Pagination” & “Post Meta Above Post Content”.

I’m aware of disabling both POST PAGINATION and POST META ABOVE POST CONTENT options.
Both are disabled.
I’m talking about the tags BELOW the post itself. See image below:

Even with POST META and POST PAGINATION disabled, these specified texts still appear.

We will add an option to remove the tags in the next update, but for now, add this css from AMP > Custom CSS
.amp-wp-tax-tag{ display:none }
Regarding the other part, It is not getting added by us. Maybe some plugin is trying to force add that part, but that is okay because here is how you can fix it. Add this CSS for it:
.coments-title, .commentcount, .hatom-extra{ display:none }
That should fix the issue.
