Hi,
Polylang should not modify the post content. So I suggest that you look for a conflict with another plugin or your theme. Switch to Twenty Nineteen and deactivate all your plugins except Polylang. Then switch back to your theme and activate your other plugins one by one until you reproduce the issue.
This problem occurs with Polylang and SG optimizer (since version 5.0.9).
I have make some tests and I can see this problem if in SG Optimizer settings I enable Memcached, if I disable it solves the problem.
For me the problem was in other plugin in Lingotek ver. 1.4.1, whis is not compatible aparently with WordPress 5.
I had also strange problems with desactivating this plugin in WordPress multisite network – it was not enough to desactivate it in Network Admin but I had also to desactivate it in all network pages separately. Looking for this took me about 6-8 hours 🙁
If a plugin desactivated at network admin level is not showing Delete option it means iot is still active in sites. After desactivating it on all the pages the option Delete showed up in netowrk Admin level plugin administration page.
