Is there a way to edit the fields in the Event Submission Form?
yes, using template files at /templates/forms/event-editor.php
Also is there a way for the administrator to have to approve an event before it goes to the calendar?
if you uncheck user capability publish_events it should goes pending and subject for approval and should not appear to the calendar or events list. Also, did you set your event submission form Guest Default User and what was his role (e.g. subcriber)?
If it doesn’t work still you might want to post some screenshots of your settings.

The file /templates/forms/event-editor.php is not in the Events Manager Editor.
OK so I need to create a user that automatically is the “creator” of the events, but is only a “subscriber”?
what do you mean by not in the Events Manager Editor.?
