However, i’m trying to choose what product i want to be visible and what product i do not want to be visible.

For those out of products that need to be hidden, you can manually change the visibility to Private.

Yes, you’ll need to manually set those products to public visibility mode when they are back in stock. You are, anyways, selecting certain out-of-stock products to be displayed – so there is already a manual intervention.
