Need Help w/Header, Home page tab

OK, two questions, both dealing w/header and front page.

One, I’m using an image that includes the title of my blog, but if I remove the title on the ‘customize’ option, it leaves the tab blank. Is there any way to fix this? I’m using 2010 Theme right now, and more than willing to change if need be, as long as a) I can keep the right side bar, b) the image for the header is uncompromised and c) I’m totally new to this and about as smart as porridge when it comes to anything tech…so writing code is *not* going to be a good thing.

Second issue: I’ve no way to get back to the home page if I remove the title. How do I set up a home page? I don’t want a static, I would like it to continue to be snippets of most recent blog posts.
