First, let me clarify about WooCommerce shop page based on this documentation. By default shop page means a page that archives of your products. Apart from that, you have ability to include your hand-picked products to regular page using blocks (only if block editor is enabled): https://woocommerce.com/products/woocommerce-gutenberg-products-block/.

Basically, I want tabs of different product categories Eg men, women and children. And then I want the products of each of those categories to have a different design like a different sidebar, information, etc. How can I achieve that?

For specific content creation and layout design, looks likely you would do some custom works that is separate from either theme’s feature or theme’s support can do for you.
