Large image embeds given different dimensions

My large image size is set to be 640px wide in the Media Settings tab. When I embed a large image in a post, the file name shows that the image has been resized correctly to the 640px width, but it changes the width and height values proportionally in the embed code so that the image is 540px wide.

Any idea what’s going on here?
