HTML EMail Customization

First of all love this plugin.

I currently have a form that is VERY long and the fields used when emailed, start to look jumbled together.

I would like to do some Customization to the email(s) sent out, so that the responses go into a table format with every other line highlighted in a a contrasting color (ex: light grey)

Is this possible? Where Can I find the coding to play with this?
