Navigate to the post you want to exclude in WP and when you’re in the edit post view, on the right hand side you will see “Show AMP for Current Page”, and if you select “Hide” that should do the trick.

As @flawlesssteaks said, you can hide posts/pages one by one from becoming AMP.
There’s no possibility to do that in bulk. However, if you want to disable AMP on Pages, you can disable AMP on pages AMP settings.
