edit value constants in whole blog

Hello Scribu,
is it possible edit value constants in whole blog?
I know that its possible use <?php bloginfo(‘name’) ?> related to blog name.
I would like have many values that are same in each post (than not custom field values). Is it possible?
Something like
<?php bloginfo(‘name’) ?>
<?php bloginfo(‘surname’) ?>
<?php bloginfo(’email’) ?>
<?php bloginfo(‘website’) ?>

It would be very interesting and useful.
