I could have inspected the root of the trouble easier if you could have used this field in your query.
For the button on this page, https://churchnewsnow.com/about, I have the default colors set at red for background, the text at white and the outline as black. I have the hover colors set at green for background, the text at white and the outline as black. When I publish the settings, the default and hover background colors remain as set but the text colors continue to remain the same, but not white. Even if I reset them to something other than white and publish the reset text colors, the text reverts to the same colors as before. Not any outline colors appear regardless of the settings. (I have removed the link from the button.)

Upon inspection, you are currently using a button block that has its own colors setting: https://wordpress.org/documentation/article/colors-settings-overview/.
There’s no issue with theme’s colors for any block that has its own colors setting.
