Custom Fields in Posts

I want to set up the Custom Fields in my posts.

Meaning I want to fill them out every time I create a new post to display new content.
I guess therefore I need to have dynamic IDs or incrementing numbers otherwise they will be reused.

Is it even possible to achieve this?
