Custom dates

Hey!

I’m making a personal archive of works i made in the past and making now, and i want to sort them by the date i made them. So not the date i posted them online.
Does anyone know how i can sort posts by my defined dates? and how i could add them? i’m thinking a custom post type, but i dont know how i could sort those.
