Critical Error Message

I am getting this error message when I try to preview a new form I am creating:
There has been a critical error on your website. Please check your site admin email inbox for instructions.I just went through a couple of days of our website being down because of the SSL Certificate expiring (oops) and (apparently) the Plug-In updates I was trying to run. So today everything has been working correctly until this error message.
The error message highlights another problem that I have not been able to resolve. It says “Please check your site admin email inbox for instructions.” Well, the admin email is an email that no longer exists. The person no longer works for the organization and her email was deleted when she left (it was not an amicable split). I have tried numerous (dozens and dozens) times to switch the admin email to my email, but nothing works. So an email telling me how to fix the error is floating around out there and I will never see it. PLEASE SEND HELP!

Errors like this are logged. Check the error log on your server. If you can’t find the log, please contact your host.
Meantime, enable wp_debug and wp_debug_log and after an error, look at wp-content/debug.log to see if anything gets logged there. https://wordpress.org/support/article/debugging-in-wordpress/
You can also try this: Please attempt to disable all plugins, and use one of the default (Twenty*) themes. If the problem goes away, enable them one by one to identify the source of your troubles.
If you cannot access wp-admin, there are other ways to deactivate plugins.
