On the review section for people who haven’t signed in, can I change it from leaving an email address to a name and location? I haven’t found where I can do this if it’s possible.

There is no default way to do that, you need to override the review section. Here is a guide to template override. https://directorist.com/documentation/directorist/developers-guide/template-override/

*You will need coding skills to add features to the section.
