On average, the WordPress files themselves represent 10mb of space. Further space consumption (themes, plugins, images, multimedia files, etc) is entirely up to you. Bandwidth also varies greatly and depends heavily on the popularity of the blogs.
Most hosting providers allow you to easily upgrade your hosting plan, so start small, keep an eye on your space and bandwidth consumption, and upgrade your plan as necessary.

You need at least a vps with 512 megs of ram.
