Is anyone able to help me and tell me how I can change this from saying ‘room available’ in green to just ‘available’?

Instead of using Say What, which requires some research into what code needs to be changed for your site specifically, you can use Loco Translate which adds a nice user interface. Whatever is adding the “room available” text would be the plugin to modify, and it’s easy from there.
