Need More UNIQUE Categories

Hello,
I’ve searched the web and even requested a freelancer from some sites but can’t seem to find an easy way ( probably the problem ) to create multiple category panels that list unique or different Parents, Children, Grandchildren cats?

WP let’s me add as many cats as I want through the widgets admin but on the site they all show up with the same parents/children in them.

Of the posts that I’ve been reading here I may have found what I needed but even after several re-reads, I’m afraid I’m just not getting it or what file to start editing.
