You don’t want to set the from address as that looks *really* spammy (e.g. a forged from address).
You’d use the reply-to header in the email to do that in a way that’s more likely to make it through a spam filter.
Adding a UI to select the email field to use for the reply-to is on the roadmap.

There’s a filter to override it. I’ll add some UI to the settings page shortly to make that easier.
