How to create custom fields?

Hi,

I am used to make 2 types of websites: from nothing, pure HTML/CSS, and with WordPress with its dynamic part which handles the posts and with some blocks of texts here and there (for design purpose) in the code base.

Now I would like to make that these pieces of text can be managed from the administration of WordPress. I called it in the title custom field but I’m not sure it is the appropriate term.

How can I do that?

The only solution I imagined until now is to create a post for each and just pull its description from the codebase with the post ID, but it doesn’t sound correct to me, they are not posts, they are blocks of text.
