This question would be more related to the functionality of the WooCommerce plugin as it’s WooCommerce that creates all of the shop categories and not any WordPress theme.
To restrict access to a category in WooCommerce you would need to use an additional WordPress membership plugin of some kind to achieve this as the WooCommerce plugin itself has no functionality to restrict category access.
