As a bit of extra info, this image
http://www.expeditioncycle.org/wp-content/uploads/2015/10/cropped-greyscale_road_title.png
is currently set as the header in Customise>Header image>Current header
I tried over riding it with
.custom-banner {
background: url(/wp-content/uploads/2015/10/cropped-greyscale_road_title.png) no repeat;
height: 686x;
width: 1640px;
}
So now I have the image as the background, but the text which should be below it is still in the banner area.
I shouldn’t have to do any of this in the first place. This is a theme-specific problem which does not happen to any other theme I’ve tried.

Please note that I provide support via http://support.webmandesign.eu. This is clearly stated at the marketplace where you have bought the Auberge Plus from. For free Auberge theme it is also possible to ask for help at https://wordpress.org/support/theme/auberge but I prefer keeping all the requests at above support forum.
Your website layout looks very strange and you are actually setting up the theme incorrectly.
First of all, the Auberge Plus theme supports custom banner. This is a widget area where you can put your own slider or image widget to be displayed. Your header image is not displayed correctly as you’ve placed some other widgets into the custom banner widget area. Please remove those widgets from the widget area and the header image should reappear.
