Every new plugin causes crash (WSOD?)

Hi all, this is my first post and I’m a novice when it comes to WP so please be patient.
I’ve been setting up a site and adding in plugins as I’ve gone along to do what I need to do (price lists, contact forms etc.)
It got to the point about a week ago where I needed to add an interactive application form. I tried to install ninja forms and the install looked fine, however, when I activated the plugin I got the WSOD.Troubleshooting:
I went over to our hosting (123-reg) and deleted ninja forms from the plugins folder which restored my admin page.
I tried to re-install; same issue.
I tried to install other plugins (initally forms plugins, then just any of the most popular ones from the front page); same issue.
I reverted the theme to 2015 and tried to install a plugin; same issue.
I deactivated all plugins and tried to install a new one; same issue.
I deactivated all plugins and reactivated the installed working ones without a problem, however adding a new one still resulted in WSOD.
I renamed the plugins folder ‘plugins_old’ and created an empty ‘plugins’ folder in our hosting package. I tried to install a new plugin; same issue.
I updated everything to the latest versions and tried everything above with the same issues repeated at each stage.I now don’t know what to do to fix this. I really need to start pressing on with the site so it can be up and functioning but if I’m at a crossroads and I’m going to have to delete the whole wordpress and start again I’d rather do that than try and fail to go any further.
Could my WP have been corrupted in any way? if so would there be a way of rebuilding it?
