Any ideas how to change the default blue color theme into different colors on the print invoice?

You can change the style, working on invoice.css file.

how can I overide it using themes? so if there’s a plugin update it won’t overwrite my custom work

At the moment it’s not possibile, we’ll add this functionality on next version.
