No.
Tagging is a different thing – has nothing to do where the posts appear.

Every post MUST be in a category, otherwise yur WP would break.
What you can do: exclude certain categories from showing up on your main/home page (look for a plugin, e.g. category visibility) – they will then appear only when a visitor clicks the category name.
