Yes, this is possible with the premium templates that support the user searchable category drop down. Basically you limit the category selection list. Here’s a link to a FAQ on how to do it with the cMap template. The same technique will work with any of the templates that support the user searchable category drop down.
As far as different fields … basically two options. One if you do not enter data in a field, it will not be shown. Another option, the premium templates support disabling fieldsets. What I mean by fieldsets is for example, the entired address can be turned off so even if addresses are entered, they will not be displayed. You can use a single template to accomplish this too since the premium templates can have different options set per page.
