I have a specific email address in my WP General Settings but for some odd reason, the form results end up getting sent to users who are listed as administrators instead. Any idea what might be causing this? Thanks.

The contact form on listings is sent to the author of the listing post. Change the author to the user you want the email to go to. Or use a contact form plugin that will let you choose who to email.
