If I understand correctly you can change this in the theme editor (right at the bottom, Flyout Background Hover From and Flyout Background Hover To)

I found a link to your site on a different ticket, I see what you’re looking for but I don’t plan on adding a panel hover background color, the mega panels are more designed for adding widgets to (like on http://www.megamenu.co.uk – see the first dropdown), so having a background hover doesn’t make much sense.
I can see you’re trying to make a horizontal flyout style menu, but using a mega panel is not the same, really I would need to add a horizontal flyout setting. That would be much better suited to do what you want to do.
In the mean time I would suggest just changing that menu to a flyout instead.
