So I used my mailchimp api key to connect mailchimp up to the plugin and when someone adds their email it goes into mailchimp but there is no cofirm subscription emails? Is this how api keys work?

Hello.
Mailchimp module will add subscribers to your mailchimp account. Confirnation email will be sent from plugin if you will enable such option.
