Can you please explain in more detail (and maybe with a link to the table) what you are trying to achieve?
Setting another sorting is not possible in the Shortcode, but it might be possible with a “Custom Command” on the table’s “Edit” screen. That however depends on what exactly you are trying to do, so I need more information about that.

Really I would like to have a main table or database into the site with all information for some objects. Then I need to show sampled information from the main table with different sorting on different pages.
I can use the parameter “hide_rows” in shortcode to make the extract. But I need also to change the sorting.

thanks for the clarification!
This should then be possible with Row Order TablePress Extension from http://tablepress.org/extensions/table-row-order/
With that you can sort the table on a column before it is shown.
