Getting Category Count

On my charity site Flipcancerthebird.com, I have all the submissions sorted by men, women, groups, ect…
In the header, I want to add a count for each category kinda like:
Submissions from men: 111
Submissions from women: 111
ect, ect…I don’t want them to be linked, just plain text. Anyone know how to do this?
