I don’t see in the meta key drop down the option to use the title of the post.

am I missing something?

post_title is not a meta key.

So how can I sort the search results by post title?

So far it can’t, you got to edit the plugin file to do that.
However, you can try my new plugin Ajax WP Query Search Filter, the new plugin is easier to customize.
