Is there a way to make the most recent past event, as well as the most next event show in two separate widgets. Like, a photo and a little blurb about the event in a widget.

Just use the event widget twice: set scope to either “future” or “past” and limit to “1”.
For how the event is shown: the formatting option is there for you.
