Any ideas why?

Worked fine before but now its showing my products on separate pages, so one product per page which is odd and not what I want!

Check your reading settings in WP. Products per page == Posts per page.

If you want to over-ride that try this snippet; http://docs.woothemes.com/document/change-number-of-products-displayed-per-page/
