Plugin for Videos and Membership

Hi All,
Wordpress Newbie here. I will be producing video tutorials and wanted to make them available via my wordpress websites.

I will be hosting some videos which registered users can view and some of them will be premium, for paying members.

I had a few questions –
1. What are some good plugins for video playback. I will be hosting these videos on my hosting service.I do not want to host these on Vimeo or Youtube since they will be freely available on those sites and defeat my purpose. Also I wanted these to be playable on multiple browsers and Devices (PC, Ipod, iPad, Android enabled etc)

2. What format would you suggest that I shoot and save my videos in?

3. What is a good membership plugin for sign up and make recurring payments via Paypal etc? I will have multiple levels of subscriptions –
Free Limited Access (Users need to register only)
Full Membership Monthly (Users need to register and pay monthly )
Full Membership Yearly (Users need to register and pay Yearly)

Any help will be highly appreciated !
